Network No. 7

Puerto de Indias, Cordial de lima con cardamomo, Zumo de arándanos, Soda.

Created by our team in 2020, its success has made it a must-have cocktail on our menu. Smooth, refreshing, and fruity, it's inspired by the red fruits from which one of the world's most original gins is distilled, pioneering the use of strawberries in an antique Sevillian still from 1880

TOM COLLINS

Ginebra, Zumo de limón, Sirope de azúcar, Soda

Its name comes from a common joke in bars: "There's a Tom Collins out there waiting for you." When the people in question went out to look for "Tom Collins," they found no one. Meanwhile, inside, the joker drank the unsuspecting customer's drink. The joke became known as "The Great Tom Collins Hoax of 1874."

GIN FIZZ

Ginebra, Zumo de limón, Sirope de azúcar, Clara de huevo pasteurizada, Soda.

1920-1933: The Prohibition years. Organized crime rose to unprecedented levels. The promotion and sale of alcohol continued clandestinely. In so-called "Speakeasys," various alcoholic concoctions were created that were capable of going unnoticed. Gin Fizz became popular because it seemed like a harmless soft drink

DRY MARTINI

Vermut seco, Ginebra.

As the master Buñuel liked it, "a tear of vermouth in an ocean of gin." It's also available in its dirtier version, the Dirty Martini, with crushed olives, or, as Churchill liked it, with sour pickled onions, the Gibson

whip

Vermut seco, Ginebra, Curaçao rojo, Grand marnier.

Perico Chicote's most popular creation, which combines a tribute to vermouth and gin combined with what he called "excellent bartender service."

PERICO CHICOTE
(May 13, 1899 - December 25, 1977)
"A good bartender must know not only the local wines and spirits, but also their blends and transformations; he must be fluent in several languages, a good psychologist, and extremely well-educated. He will have an easy and pleasant conversation, be well-traveled, know major cities, hotels, and casinos, and be discreet and reserved..."

Negroni

Vermut dulce, Ginebra, Campari.

It originated in the 1920s in Florence, the most aristocratic place in Europe. Count Camillo Negroni used to hang out at the Café Casoni, and together with the bartender, they created this cocktail, which they named after their most frequent customer. We serve it with a touch of soda, just as the great diva Sofia Loren requested from Perico Chicote

ESPRESSO MARTINI

Vodka, Café espresso, Tía María.

Created in 1984 by Dick Bradsell, bartender at the Soho Brasserie in London, the myth of its origin is shrouded in mystery. CLASSIC MOJITO

Ron blanco, Lima, Hierbabuena, Azúcar, Soda, Angostura bitters.

Perico revives this classic cocktail, whose history dates back to the 16th century, when it was known as "El Draque," in honor of the English pirate and slave trader Francis Drake. The mojito's name comes from 'mojo,' a Cuban dressing made with lime and used to season dishes. Perhaps because it also contains lime, the drink was ordered 'with a little mojo,' i.e., 'mojito.'

Strawberry Mojito

Ron blanco, Lima, Hierbabuena, Fresa, Azúcar, Soda, Angostura bitters.

When something is a hit, many versions emerge. This is the case with the strawberry mojito, which adds a touch of sweetness thanks to the ripe fruit. With a few simple ingredients, you can reinvent the summer cocktail—and make it even better

Dark and stormy

Ron especiado, Zumo de lima, Ginger beer, Sirope de azúcar.

Known as the "unofficial" drink of Bermuda since 1860, the Dark 'N' Stormy was named after a sailor who, seeing the dark, cloudy-looking drink, was reminded of the constant storms that battered the archipelago and wrecked ships. Thus, he dubbed it "Dark 'n' Stormy."

A drink created in the 19th century, when soldiers of the Austro-Hungarian Empire dominated the north of the Italian Peninsula. It was declared a Peruvian Cultural Heritage site in 2007
